Granola is a great way to incorporate whole grains, nuts and seeds in your life - and it is so easy to make, and releases such delicious aromas into the house, and tastes sooooooo good, you just might develop a habit of it!
This recipe is easily adapted to include all your favorites - or whatever you have on hand. No walnuts in the house? Great, replace them with chopped almonds and cashews. Hate cardamom? No problem, replace with cinnamon. Make it your own!
Ingredients
4 cups rolled oats
1 cup chopped walnuts
3/4 cup sunflower seeds
1 cup shredded coconut
2 tsp ground cardamom
1/3 cup ghee
1/2 cup maple syrup
1 cup dried unsweetened cranberries
1/4 cup finely chpped candied ginger
Instructions
1. Preheat the oven to 300 degrees F. Cover two rimmed baking sheets with parchment paper.
2. Mix dry ingredients in a big bowl.
3. Heat the ghee and maple syrup in a small saucepan and whisk together, then pour over the dry ingredients and stir until thoroughly mixed.
4. Divide evenly between two baking sheets and spread evenly.
5. Bake at 300 degrees for about 45 minutes, stirring twice, until toasty brown. (You may want to trade the pans' position in the oven halfway through for more even baking). After removing from oven, press the granola down with the back of the spatula to encourage clumps.
6. Mix in the dried cranberries and candied ginger, and store in an airtight container.
